I will eat raw food at least once a day...and commit to a mostly vegan diet.
My fave raw foods atm are:
Vietnamese cold rolls
I make these with mung bean shoots, soaked mung bean noodles, carrot, cucumber, tofu (that is cooked), coriander and mint. Rolled in soft soaked rice wrapper. Delicious!
Easy Hand held Sushi
Cooked rice, nori sheets cut into four squares, but all raw toppings - carrot, cucumber, sprouts, avocado. Put a ball of rice in square of nori, top with one or two raw ingredients, and fold square diagonally and eat.
And pickled ginger on the side. Drizzle with shoyu and a drop of sesame oil. Oishi!!!! (delicious)
Banana and nut-butter bread
Sliced banana on fresh nut butter (almond, brazil and cashew) and a drizzle of honey. MMMMMMMMmmmmmmmm!!!!
For extra indulgence, add sliced strawberries too!
What a way to start the day!
Everything in it. Rocket, tomato, fresh corn sliced from the cob, mint leaves, parsley, capsicum, raw mushroom, carrot and beetroot grated, sultanas, mango or pineapple, shredded coconut, sprouts, anything on hand...and seed/nut sprinkles - sesame, sunflower, almonds, cashews all work well.
Nb:add beetroot last, after tossing rest of salad, or you have "pink" salad rather than rainbow...
So simple - add at least 3-5 different fruits. Choose different colours and textures.
eg: banana, strawberries, mango, grapes, melon.
drizzle with passionfruit and shredded coconut.
and a great snack: BABY COCONUT
Make a hole, and drink the juice with a straw - delicious if coconut is chilled first. Then bash the drained coconut with a sturdy fry pan, and scoop out the flesh with a spoon! Delicious!
Tip: Mix coconut juice with pineapple juice for a pina colada mocktail!
